The Badia a Coltibuono Vin Santo del Chianti Classico 2017 is a brilliant golden amber, organic dessert wine with rich and complex flavors. Aromas and notes of honey, toasted almond, vanilla, and dried fruits like apricot and fig define its profile. Despite its sweetness, the wine is balanced by a vibrant acidity that gives it a clean and elegant taste with a very long finish. It is made from a blend of Trebbiano and Malvasia grapes that are air-dried and then aged for seven years in small, sealed oak casks. The traditional pairing is with almond biscuits. It also pairs excellently with blue cheeses, liver pâté, panettone, or other dry pastries and mature cheeses. It can be served as a dessert or a meditation wine on its own.
